Here's another of my go-to sides/dishes. If you need something fulfilling, nutritional, healthy, and YUMMY, and sweet potato is the perfect catalyst to your cravings. You can really put anything with it and it will be delicious. Sometimes you are just too tired and hungry to think. That's why I'm here! Here's the basic recipe and then I'll throw some ideas!

This is about as simple as it gets. You can amp it up with some tofu or tempeh or jam it with more veggies or you can keep it simple with a green and cheeze (I use Daiya mozzarella shreds)
Here's how I made it and I'll add some extras at the end:
Simple is as simple does:
1 sweet potato
1 cup kale
1 handful cranberries
two shakes garlic powder
1 tsp rosemary
olive oil
cheeze as desired (or no cheese! Still delicious!)
- Cook sweet potato either by baking/roasting or nuking if you're REALLY hungry with no time
- Lightly steam kale (and other veggies)
- Throw all ingredients in a pan with a slurp of olive oil.
- Coat and brown everything as desired
- Place in microwave-safe dish and melt cheese for about 30 sec - 1 min
So those are the bare bones. Here are some tips:
- Cook ingredients mostly through before frying in pan. It's nice to get a little color on the potatoes and that old greasy spoon hash feeling, but cooking before will let you get the desired "fry" or color amount without relying on it to cook or soften and possibly burn the ingredients.
- Here are some other possibilities to add: broccoli, onion, leek, chard, chopped nuts, YOUR FAVORITE!
- Swap out rosemary and garlic for your herbs/spices of choice. Hot sauce goes well
- Cranberries are awesome but I'm sure you could toss some orange or apple to dress it up
- Next time I'm putting tempeh in and going to town!
