I was a very tired and travel-weathered Kira. To the point that I was occupying my time by taking pictures of myself on the train... Yes, that's me trying to sleep on a train. I'm going to justify it this one time because my fingers were about to freeze off. As you can see, I was not a happy camper...
And when you're bored, what do you think of? Food! I had a great few days with my family for thanksgiving. How can I top this? How can I hit another home-run in the home-stretch.

FEAST YOUR EYES!!!
RECIPIE:
2 - Sweet Potatoes
3 - leaf kale
1 - Handful Cranberries
1/2 - tsp garlic powder
3 - shakes hotsauce (or more if you like it hot!)
1 - tsp rosemary
1/2 - cup almond milk or water
1 - cup cooked macaroni - Find this great gluten free macaroni HERE!!!
- Bake or Microwave sweet potatoes
- Cook macaroni WELL. The broiling will dry it.
- Steam kale lightly. Or not if you want more crunch!
- Carefully cut lengthwise and scoop flesh out into bowl with rest of ingredients. Keep shells!
- Carefully move shells to broil-safe baking dish
- Mix all ingredients together and carefully spoon back into shells and reserve some cranberries. If you break a piece off, no worries! Push it aside, pile on filling, and make it bite-sized.
- Place a few cranberries on top. They pop in the oven!
- Broil for 5 minutes or until the top begins to brown
- Carefully transfer sweet potato boats to plate and ENJOY
- I suggest and knife and fork for this hearty dish!
