So I don't care that it is a tad late and 39 degrees outside. I felt like ice cream and admit I licked my lips while my roommate had real ice cream for dessert.
See I always feel GROSS after I eat the "real stuff". But instead of sitting and pouting and counting things I CAN'T have I choose to make my own with a CHALLENGE. I'm going to make terribly and deceptively decadent ice cream. All you've got to do is take frozen fruit and CREAM it into a wonderful frozen dessert. Here we go... 2 kiwis 1-2 bananas, frozen 1/3 c blueberries, frozen 3-4 strawberries 1/3 - 1/2 c coconut water/coconut milk/ almond milk Add all ingredients to blender and pulse about 5 times and then blend until all ingredients are blended together. Try to add as little liquid as possible. It blends more quickly but it comes out closer to a smoothie than ice cream. VOILA! You have creamed ice and made a pretty much guilt-free dessert. If you want short, cold, and, sweet - boom. I even added a teaspoon of flax meal for some Omega 3 and fiber. I'm sure when my roommate gets up he will be jealous. HA!
